Remember firecracker popsicles? Pass these patriotic pops out to friends on the 4th. These pops are easy to make, don’t contain any of those retro additives or dyes, and are the perfect color theme for the Patriotic holiday.
Buy this mold (it’s close enough to the Firecracker template), some wood popsicle sticks, and get to freezing. Want to spice things up? It’s perfectly OK to add some vodka to the puréed fruit.
- 1.5 cups hulled strawberries
- 1.5 cups blueberries
- 7 Tablespoons sugar
- 6 Tablespoons lime juice
- ¾ cup plain yogurt
- 4.5 Tablespoons heavy cream
Puree the strawberries, 2 T sugar and 1.5 T lime juice in a blender. Fill the molds 1/3 of the way. Freeze until firm, about 30 minutes.
In a bowl, whisk together the yogurt, cream, 3 T sugar and 3 T lime juice. Top the frozen strawberry layer with the yogurt mixture, filling each another 1/3 of the way. Freeze until firm, about 30 minutes.
In a clean blender, puree the blueberries, 2 T sugar and 1.5 T lime juice. Remove molds from freezer and insert popsicle sticks through the white layer. Top with the blueberry puree, leaving a tiny bit of free space at the top of the molds. Freeze 3 hours until solid.
Tip: Before serving, quickly run the molds under hot water to release the pops.
