The Peruvian spirit Pisco is making waves in North America because of its complex flavors and cocktail mixability. Pre-Prohibition, Pisco was all the rage on the San Francisco cocktail scene and it’s back again, baby. On the forefront of the cocktail revolution, Pisco is a favorite of bartenders all across the country. This includes The Savory’s pal, Zachary Patterson. The Girl from Lima, inspired by Zachary’s travels (not to mention love trysts) throughout Peru is (just like the women he met) “a little spicy, a little sour, a little refreshing and very sweet.”

2 oz Pisco
1 slice serrano chile
6-8 mint leaves
1 oz passion fruit (sweetened to taste with granulated raw sugar)
¾ oz lemon juice
Muddle mint, serrano and puree hard enough to crush pepper and only bruise mint. Add lemon and Pisco, shake and strain into iced Collins glass. Garnish with lightly slapped mint and serrano chile slice.
