Continuing our series of vegan BBQ options this summer, we’re going to hit you with a wonderful veggie taco recipe that would be a perfect addition to a diverse, faux-meat backyard party.
Tacos are great for hands-on outdoor parties. Setting up the little toppings for everyone to help themselves and keeping things light with grilled veg rather than stodgy meat will keep everything lean and will win you some major cool points with any health conscious diners in your number.
We found this great recipe on Oh, Sweet Basil, a fantastic lifestyle web site aimed at promoting healthy living. We made a slight modification to the recipe, using vegan sour cream as opposed to regular, but for the most part this recipe is good to go and completely animal-free.
Hard Taco Shells
1 Tbl. Old El Paso Taco Seasoning
1 each of Red, Green, and Yellow bell peppers
1 pint Baby Bella Mushrooms
1/2 Onion, sliced
1 small Zucchini, chopped
1 small Yellow Squash, chopped
Salt and Pepper
1 Romaine Lettuce Leaf, chopped into fine strips
1/2 cup Vegan Sour Cream
1/2 tsp. Chili Powder
1/2 tsp. Cumin
