Meals Made Easy: 3-Ingredient Stunners

Summer casual is everything.  Let fresh, punchy ingredients speak for themselves.  These “recipes” are perfect as picnic snacks, weeknight meals or lazy August days by the pool.  These 3-ingredient dishes are arranged by their appropriate food groups.  Relax and savor their simplicity:



Mix: Boil shrimp until pink (4-8 minutes depending on size of shrimp), toss while still warm with a few spoonfuls of apricot jam and chili flakes.

Grill: Grill salmon per usual, top cooked fish with finely chopped pineapple mixed with a splash of soy sauce.

Open-Faced: Grill a piece of white bread.  While still warm, spread with boursin cheese and top with cooked and thinly sliced steak of choice.



Stack: Slice cucumber and top portions with dollops of hummus and chopped dill.

Mix: Mix grilled corn, roughly chopped cilantro, and Cotija cheese in a bowl and serve as a side.

Sauté: Sugar snap peas with thinly sliced strips of salami.  Serve as a side and top with fresh mint.

Steam: Steam asparagus (around 5 minutes) until tender. Marinate them in Italian dressing and then chill in fridge.  Crumbled boiled egg on top to serve.



Assemble: Grill store-bought flatbreads, then top them with roasted kohlrabi (or any root vegetable), and drizzle with honey.

Toss: Stir together quinoa, chopped dates and slivered almonds for a side dish.

Toss: Cook and cool pasta of your choice, dice some fresh tomatoes, chop some chives, and then toss all together.

Assemble: Put leftover cornbread pieces in a bowl and top with crispy chopped bacon. Drizzle this with maple syrup. Breakfast.



Slice: Slice melon of your choice and wrap in prosciutto.  Sprinkle chili powder over top of slices.

Mix: Cube a watermelon and place in a bowl.  Squeeze some lime over top, add chopped mint, and mix for a simple fruit salad.

Puree: Purée the flesh of medium cantaloupe with 2 Tbs honey.  Place in fridge until chilled. Fold in ½ cup heavy cream. Voila, fruit soup.



Spoon: Top ice cream with good balsamic vinegar and a sprinkle of sea salt. Vanilla and chocolate work just fine.

Blend: In a food processor or blender, add the flesh of three avocados, 6 Tablespoons cacao powder, and 3 Tablespoons honey. Blend for instant mousse.

Bake: Dip marshmallows in melted butter and wrap them tightly in pre-bought crescent roll dough. Bake 11 minutes for dessert.

Spread: Spread nutella on plain baked pizza crust. Top with sliced strawberries.



Porch: Sunset, Tom Collins, good book.

Yard: Summer stonefruit, lawn chair, horseshoes.

Beach: Salt water, salt rim, sugar snap peas.
