We’re in the thick of it, folks: it’s soup season. Soup’s ability to transcend a season in one purèed bite is redefined in Eva’s Adventures In Cooking’s Roasted Pecan Acorn Squash Soup.  She brings out the smoky, nutty attributes of roasting in this recipe by combining and pureeing both roasted pecans and winter squash.

There is no way (after visiting her blog and peeping at her photos) that you won’t want to stay home, cozy up next to the stove and attempt every one of her recipes – especially this handsome soup.

She mentions that cutting the cream in her recipe is totally acceptable if a lighter, healthier soup is desired. The puréed roasted pecans impart that anticipated creamy richness all on their own.
