For Your Weekend: Corned Beef Hash (with eggs)

Pancake Day came and went, and now today is National Corned Beef Hash Day. For tomorrow morning’s taste buds, we’ll grab you a simple recipe for the glorious peasant food – complete with eggs on top.

It’s practically impossible to go wrong when you combine corned beef, potatoes, onions, garlic and fried eggs. The corned beef takes on a concentrated and pleasantly chewy intensity when cooked in a hash. Let’s not forget about the crispy bits. For this dish, the sautéed potatoes are meant to have those crispy, salted little nubs left over in the pan.

Add diced carrots to the mix to counteract the salt in the dish with their slight sweetness. If desired, use butter instead of oil for obvious extra richness and parboil potatoes first for extra crispness.
