A Paleo Unicorn Cake
Grace is already growing up fast and recently celebrated her 4th birthday. Just like most of the kids her age, she asked her mom for a Unicorn birthday cake. However, this cake came with a healthy twist! On her FB page, Shannon shares the back story behind her magical cake. “We wrangled the unicorn cake as requested without any artificial colors or flavors and kept it gluten & dairy-free. I used CocoLuscious vanilla ice cream and then colored the layers with blueberries, mango & turmeric & raspberries… The unicorn topper fiasco was a headband she had that was broken… No doubt she’ll have a meltdown and my efforts to create a bloody unicorn cake will go unnoticed as we wallow in the demise of the headband. Good times!”
