One of the inspections that I remember being horrible was at a Chinese place in strip malls. The restaurant’s wok chef had an overflowing ashtray right next to where he kept the meat. There were rodent droppings and piles of dead flies behind the range, but that wasn’t the worst part. When we checked the soda gun, there was so much mold that it was a wonder as to how the soda got through. I got a job offer in a different field two months later and I’ve never looked back.
