I was an inspector for over 10 years so trust me when I say the most dangerous things that you’ve read aren’t usually the most disgusting. The worst is when walk-in coolers are higher than 55-60°F, or when mice have died in the grease fryer. You should also be worried about cooks who throw patties on the grill then make a salad right after. The absolute worst is when the dishwashing machine is not sanitized properly.
