Along with providing a viable nutrient alternative, consuming insects will directly contribute to the health and increased yield of edible crops. “Chapulines arrive and destory cornfields,” said Gabriela Jimenez Casas, a researcher at the Institute of Ecology at the National Autonomous University. “If we consume them we are helping the farmers, they don’t use incesticides and we’re stopping an infestation…and we’re not spending any money for their consumption.”
